Columbia is well established as a key producer of mild arabicas. Today, Colombia is emerging with many micro lots each with their own particularities. They stand up very well against their competitors.
Ana Pureza Vargas’ coffee has been recognized by the F.N.C. ( fondo National del Café) and is in the top 4 coffees in their region. The producer uses a local process known as Boyaca, where the beans are fermented for 14 hours with the muselage still attached, then sun dried.
